Finding easy meals and working with a college budget can be difficult and can seem unappealing with the idea of less ingredients. However, nothing screams comfort food more then eating the cheesy goodness that comes from lasagna. You can never go wrong with lasagna and with the added bonus of reheating leftovers through the week, it’s a win win! Here is a budget friendly and hassle free lagana recipe that can be used as leftovers or shared with friends. 

Weeknight Lasagna 

Start to finish: 30 minutes 

1 box of bow tie noodles 

½ cup part-skim ricotta cheese 

½ cup of shredded part-skim mozzarella cheese, divided 

¼ cup of grated parmesan 

1 jar of pasta meat sauce (24 oz)

Preheat the oven to 400°F, cook noodles to packaging instructions. While the pasta is cooking, in a large bowl mix together all of the cheeses. Drain the noodles well and stir into the cheese mixture. 

Spread 1 cup of pasta meat sauce on a greased 8×8 inch baking dish. Add a layer of the pasta and cheese mixture, then top with another cup of pasta meat sauce. Add an additional pasta and sauce layer and sprinkle the remaining shredded mozzarella on top of the lasagna. 

Cover the dish with a greased foil and bake until heated through for roughly 10-15 minutes. Enjoy your cheesy lasagna!
