Welcome in the springtime with the freshness and health of a classic caesar salad!

Serving Size: 2-3 servings
Ingredients:
- 1 head of romaine lettuce
- 1 can anchovies in oil
- 1 ½ tablespoons capers
- 1 ½ tablespoons grated garlic
- 1 ½ tablespoons olive oil
- 1 ½ tablespoons dijon mustard
- 2 tablespoons mayonnaise
- Juice of half a lemon
- 1 egg yolk
- 1 cup grated parmesan cheese
- 1 cup caesar salad croutons
- Salt and pepper to taste
Instructions:
Begin by peeling the lettuce from its stalk. After rinsing the leaves, slice off the bulky white stalk of the lettuce making sure to cut the green, leafy bits into bite sized pieces.
In a bowl, begin by mashing the anchovies, capers and garlic with a fork. Use a knife to make their texture as fine as possible.
Add the olive oil, dijon mustard, mayonnaise, lemon juice, ½ cup of parmesan cheese and an egg yolk to the mixture and combine well. Add salt and pepper to taste into the dressing.
In a large bowl, add in the romaine lettuce. Mix in the caesar dressing, topping it off with the rest of the parmesan cheese and the caesar croutons.
Serve as a side, or enjoy as an entrée.
