Nola Perifel / The Highlander

Prep Time: 50 minutes

Servings: 5-6 slices 

 

Ingredients:

  • 3 ripe bananas
  • 1 whole egg
  • ½ cup sugar (or substitute ⅓ cup honey)
  • 1½ cups flour (all-purpose or whole wheat)
  • ½ – 1 scoop vanilla or unflavored protein powder (optional)
  • 1½ tablespoons baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Chocolate chips or chopped Hershey’s

 

Instructions:

Preheat the oven to 350°F (175°C) and lightly grease or line a loaf pan with parchment paper.

In a large bowl, mash the bananas with a fork until smooth. Add the egg and whisk with a fork until combined.

Stir in the sugar (or honey), then add the flour, protein powder (optional), baking powder, vanilla extract and salt. Mix until combined. 

Fold in the chocolate chips or chunks. Pour the batter into the prepared loaf pan and smooth out the top. 

Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool for 10 to 15 minutes before slicing.

Optional: Add two tablespoons of Greek yogurt for extra moisture and protein, a teaspoon of cinnamon or nutmeg for warmth or a handful of chopped walnuts or pecans for crunch.
